It's lovely to hear that you are considering traveling to Ho chi minh city. Ben Thanh market is famous for not only many kind of goods which come from most of region in Vietnam but also unreasonable price. It's just suitable for getting around and haveing a look. I recommend another market - Binh Tay market in old side of Ho chi minh city- Chợ Lớn.
Eating seafood is a nice choice - you can eat many kinds of snails which are sold at small shop to big restaurant. Speaking of local food, you should not miss Vietnamese street foods which are typical. You can visit Reunification Palace, Saigon Central Post Office, Pham Ngu Lao street and Saigon Square in just one day. It is the center area of district one. Emperor Jade Pagoda is not so far from the center of district 1, you can take a taxi to travel there in 10 minuts.
Cu Chi Tunnels is quite far from the city. It would take about 3 hours to go there by bus.
Vietnamese seafood is very very tasty. I love seafood!!! And I know good places to eat local dishes with reasonable price. ^^
